Hearty Lentil Stew

Rich in iron and protein, this hearty lentil stew is perfect for the Luteal Phase, helping to combat fatigue and prepare your body for menstruation.

Instructions:

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic, sautéing until softened.
  2. Add the carrots and celery, and cook for another 5 minutes.
  3. Stir in the lentils, vegetable broth, diced tomatoes, cumin, and thyme. Season with salt and pepper.
  4. Bring to a boil, then reduce heat to low, cover, and simmer for about 35 minutes, or until the lentils are tender.
  5. Adjust the seasoning if needed and serve hot, garnished with fresh parsley.
